Product Description Detailed Specs Measurements The Yuri series are extremely thin stainless steel knives. The core steel is AUS-8 at about 58-59 hrc. The fit and finish is very nice, and their more petit size makes these great for home cooks or chefs looking for something for smaller tasks or tighter spaces. When I say these are thin, they are VERY thin... both at the spine and behind the edge. The handles are an octagon/oval hybrid shape, and feature a metal cap near where the blade enters the handle. The handles are a bit smaller, to compliment the size and shape of these knives well. The top of the handles (where the blade enters the handle) have also been sealed, so no water can enter the handle. The profiles are generally flat near the back 1/2 of the blade, with slight upsweep towards the tip. They come with elegant wooden presentation and storage boxes.
