Wilde Field

This pressed curd, washed rind cheese is sharp, complex, and boasts a true taste of Massachusetts. The IPA it’s washed in comes from Shire Beer Company in Dalton, just 15 miles from where the cheese is made. The final result? Slightly crumbly, cheddar-esque wheels with a savory, brothy base and a lingering mirepoix finish. The IPA wash contributes a tart brightness that mingles with the cheese’s umami depth. All of High Lawn’s cheeses are unique expressions of their pure Jersey milk. After farming Jersey cows for over 100 years, High Lawn understands the Jersey breed like few other farms do. Jersey milk has higher levels of vitamins, minerals, and protein than other breeds, giving cheeses made with it a complex, sweet flavor. These small cows also use less land and resources than other breeds, making High Lawn’s operation that much more sustainable.  Try Wilde Field with Blake Hill's Apricot Orange Jam, and check out the rest of our washed rind cheeses here!
