Fulton Fish Market Wild Paddlefish Caviar

Our luxurious paddlefish caviar is a favorite with those new to caviar and connoisseurs alike. Paddlefish caviar has a briny, ocean flavor and firm pearls that pop in the mouth. We enjoy this striking caviar as an appetizer or as part of an elevated brunch spread. Ranging in color from pearl gray to dark gray. Nothing but caviar and salt. Sourced from wild-caught paddlefish native to the Mississippi and Missouri Rivers. Paddlefish are large freshwater fish that can grow over 5 feet long. Paddlefish are also known as spoonbill because of their snouts. Perfect atop a blini and crème fraîche or to integrate into other dishes but opt for a sturgeon caviar if you're looking for a centerpiece to entertain with. Although similar to sturgeon, the paddlefish caviar is technically roe. Did you know...roe is a general term for eggs harvested from fish, while caviar is a specific kind of roe from fish within the sturgeon family.
