White Glove Upgrade, center cuts only

When we see the white glove upgrade, we pause everything and cherry-pick the best portions for your box - center cuts only, consistent shape and size for even cooking, bright color with no blemishes, and perfect seal integrity. While our fish is always premium, we also have high sustainability standards, which means we utilize the whole fish and do not waste. Without the white glove upgrade, you will see natural variability in the exact size, shape, and thickness of each portion because every fish is not the same. You would also expect about 1 tail for every 4-6 portions as that is the natural ratio in the fish.  Our center cut portions do not include the collar or tail portions, however, they do include the belly flap. We do not remove the belly when cutting our salmon because it would be  wasteful. Although it's thin, the belly is high in omega 3 fats, and often the best tasting part of the fish!  The white glove upgrade extends to all products packed in your box.
