Waxwing All-Purpose Blend

Red Rooster Coffee's Waxwing All-Purpose Blend lives up to its name—this is the rare coffee that performs beautifully whether you're pulling shots or brewing a morning pot. Roasted to the darker side of medium in Floyd, Virginia, Waxwing brings the body and sweetness espresso lovers want while maintaining the clarity filter brewers need. It's the kind of versatile workhorse that belongs on every home bar. Tasting Notes As espresso, Waxwing opens with an inviting orange blossom aroma before delivering a structured shot layered with milk chocolate, buttery shortbread, and a surprising salted lime brightness. Ripe pomegranate acidity cuts through beautifully in milk drinks without turning sharp. The body is full but not heavy, with a clean finish that invites the next sip. Brewed as drip coffee, the profile shifts to something softer and more contemplative. Warm chocolate aromatics lead into a silky, mellow cup with notes of dark chocolate, red raspberry, and a subtle pistachio nuttiness. The acidity backs off just enough to let sweetness take center stage—this is coffee that's easy to drink all morning long. Brew Methods Waxwing shines across the board. Pull it as a straight shot on a manual lever machine for maximum texture, or dial it in for milk drinks where the chocolate and fruit notes play beautifully with steamed milk. On the filter side, it excels in drip brewers and pour-over methods like V60 or Chemex, where you can bring out its silky sweetness. French press works too—just expect a richer, more full-bodied result. The medium-dark roast level means it's forgiving with grind size and brew ratios, making it an excellent choice if you're still dialing in your technique.
