Advantage Vitry Double Hollow Ground Reed Knife

If you loved the legendary "Philly-Herder" knives from the old days, you will love our Vitry reed knives! The steel on these double hollow ground knives are of medium-soft hardness and very easy to sharpen. The scraping edge is thin and fine, which allows for the most delicate, minute scrapes. If the knife chatters, a simple solution is to refine the edge on our honing steel. The knives come attached to our ergonomic handles that feel comfortable in all hands. Can be sharpened for right or left hand use. Also offered with a wood handle.
