Ver Sacrum 2023 Monastrell

Tasting Notes The Ver Sacrum 2023 Monastrell opens with a vivid aromatic profile, showing lifted notes of black cherry, ripe plum, and wild blueberry layered over hints of violets, cracked pepper, and a subtle earthy minerality. On the palate, the wine is medium‑bodied yet energetic, balancing juicy dark fruit with refreshing acidity and fine, lightly rustic tannins that give it structure without heaviness. A touch of savory spice and dried herbs emerges toward the finish, reflecting the varietal character of Monastrell (Mourvèdre) while showcasing the winery’s signature elegance and restraint. Though the wine is varietally driven, small amounts of complementary Rhône varieties are sometimes used by Ver Sacrum to enhance aromatic lift and texture, contributing nuance without overshadowing the Monastrell core. This vintage pairs beautifully with dishes that echo its depth and brightness. Grilled lamb chops, roasted pork with herbs, or charred vegetables bring out its savory side, while paella, mushroom risotto, or aged Manchego highlight its fruit and spice. The wine’s acidity and moderate tannins also make it a natural companion for tapas, especially chorizo, jamón serrano, or smoky paprika‑driven dishes. 750ml
