Talus® delivers bold aromas of pink grapefruit, citrus rinds, dried roses, pine resin, tropical fruits, and sage—flavors that persist throughout the brewing process. Previously designated HBC 692, this variety results from a hybrid cross between Sabro® and open pollination, offering intense citrus, floral, and woody notes with hints of grapefruit, stone fruit, oak, coconut, and pine. As a Sabro daughter, Talus® presents a more refined coconut character than its parent. Talus® stands out for its distinctive 1:1 alpha-to-beta acid ratio—a trait prized by German brewers crafting pilsners, as it contributes to a more balanced, harmonious bitterness profile.
