Washed Process: Double Anaerobic Fermentation, Dried in a Dark Room on Raised Beds This Tabi variety undergoes a two-stage fermentation process. First, the cherries are anaerobically fermented whole for several days. After pulping to remove the outer skins, the seeds are returned to ferment in their own 'mosto' (juices) for another 24 hours.
