This unique type of specialty sugar is made of large, opaque granules that retain their shape and texture when baked. Also known as nib sugar or hail sugar in other parts of the world, it is popularly mixed into waffle batter, sprinkled over cinnamon buns and sweet breads, and pressed into cookies and shortbread before baking. Its unique, snowy appearance and satisfying sweet crunch make it both a visual and textural enhancement for decorating. Because it does not dissolve easily, it is not suitable for sweetening beverages.
