It has a spinach-like taste with very mild bitterness and a more tender texture. The small bok choy tip is great for stir-fry, sauté, and braise. Small bok choy tip is available year-round. Handling Tip Selection The small bok choy tip has firm stalks with no signs of brown spots. The small bok choy tip has uniform green leaves with no bruises and is not wilted. Storage Small bok choy tip should be stored at 32°F - 41°F (0°C - 5°C) with relative humidity above ninety-five percent with mist. The typical shelf life is seven to ten days. Small bok choy tip is not sensitive to ethylene, a naturally occurring gas that regulates ripening, and produces a low amount of ethylene. Small bok choy tip is not sensitive to chilling injury and should be stored as cold as possible without freezing. Small bok choy tip freezes at 31°F (-0.5°C).
