Small bok choy has bright green leaves with no bruises and is not wilted. Storage Small bok choy should be stored at 32°F - 41°F (0°C - 5°C) with relative humidity above ninety-five percent with mist. The typical shelf life is seven to ten days. Small bok choy is not sensitive to ethylene, a naturally occurring gas that regulates ripening, and produces a low amount of ethylene. Small bok choy is not sensitive to chilling injury and should be stored as cold as possible without freezing. Small bok choy freezes at 31°F (-0.5°C).
