Cup Profiles & Provenance Single-Origin: Sítio Bom Destino, Espírito Santo Crafted by producer Josiane Lima Bissoli at Sítio Bom Destino in Afonso Cláudio, this 900-meter, washed Yellow Catucaí 2SL captures elegance in its purest form. A medium roast unlocks a bouquet of floral aromatics that open into notes of honey, raw sugar (rapadura), and ripe peach. With an SCA score of 86+, it is a quintessential single-origin Arabica that shines in both pour-over and espresso, delivering clarity, a clean finish, and refined sweetness. Expect a graceful cup that pairs beautifully with lighter breakfasts and afternoon contemplations. Honey Process: Alto Santa Joana, Espírito Santo From producer Waldir Manske at Sítio Alto Santa Joana (1,100 meters), this Yellow Caturra is a study in texture. The honey process (pulped natural) imparts a velvety body and a polished, medium, rounded acidity. Aromas of cane molasses and honey lead to a raspberry-laced finish. Scoring above 86, it’s the cup you brew when you crave comfort and depth without sacrificing nuance. Its sweetness is generous yet composed, making it ideal for Kalita or V60, and surprisingly lush as a modern espresso with gentle fruit lift. Premium Blend: Mantiqueira de Minas & Serra do Paredão Blended by Black Tucano Coffee Roasters from the work of producers Carlos Henrique & Daniele Alkimin and Marcos Rennó & Andréia Moreira, this Arabica composition marries Yellow Catuaí and Mundo Novo across 920–1,200 meters. A thoughtful combination of fermented and natural lots yields a cup that is generous and layered: chocolate, red fruits, milk chocolate, caramel, apple pie, cocoa, rapadura, and nuts. With a medium-to-full body, medium-low acidity, and SCA 86+, it’s engineered for versatility-equally gratifying as a daily filter brew or a classic, creamy espresso shot. Recommended grind is ideal for filter methods and traditional coffee makers, striking a balance between sweetness and structure. Fruity Limited Edition: Sítio Bom Destino, Espírito Santo From producer Lima Bassoli at Sítio Bom Destino (850 meters), this Catuaí 81 lot embraces carefully managed fermentation to coax vivid fruit complexity. A medium roast preserves peak aromatics: strawberry and raspberry beam through a syrupy line of molasses and honey. With an SCA score above 89, it’s a standout, limited-release specialty coffee that rewards mindful brewing-bloom generously, keep extraction balanced, and enjoy a radiant, dessert-like cup. It’s also excellent for traditional coffee makers, revealing a cozy, jammy sweetness as it cools. Craft, Care, and Sustainability These coffees celebrate precision at every stage-selective picking, careful processing (washed, honey, and fermented), and intentional, roast-to-profile development. Black Tucano partners with dedicated producers across Espírito Santo and Minas Gerais, emphasizing traceability and quality improvements that respect land and community. By choosing this kit, you’re supporting smallholder craftsmanship and resilient agricultural practices that safeguard Brazil’s iconic coffee landscapes for future generations. Brewing Guidance for Peak Flavor Filter ratio: Start at 1:16 (coffee:water) with 198–205°F water. Adjust finer/coarser to tune sweetness and clarity. Espresso: 1:2 ratio in 25–30 seconds as a baseline. The Single-Origin and Premium Blend shine with syrupy sweetness and balanced acidity. Grind: Aim for even extraction. The Fruity and Premium lots are ideal for filter methods and traditional coffee makers. Water: Use fresh, low-mineral or properly filtered water to enhance aromatics and mouthfeel. Rest: Let freshly roasted beans de-gas. Many find days 5–14 post-roast especially expressive.
