For the Air Goddess — the one who finishes the dish standing over the stove, by nose. These salts come from the centuries-old mines of Maras, high in the Sacred Valley of Peru, where mountain spring water is guided into terraced pools and left to the sun. They are harvested by hand using traditional methods by a woman-owned cooperative, which is both the ethical way and the reason the salt still tastes like somewhere. Rich in minerals and trace elements, with a natural pink hue. This is the herb blend: rosemary, thyme, tarragon, and sage, ground fine — about the size of fine kosher salt. Herbaceous, faintly sweet, aromatic. Put it on roast chicken, on potatoes, on eggs, on tomatoes that need help in February. It is a finishing salt that makes ordinary cooking taste like you meant it.
