~25 - 30 lbs Shanghai Choy aka "Baby Bok Choy", "Shanghai Bok Choy", "Green Stem Bok Choy", "Shang-Hai-Cai", "Qing-Jiang-Cai", "上海菜", "青江菜" Shanghai choy has jade green smooth leaves that are shaped like soupspoons attached to pale green stalks. It has a mild, sweet cabbage-like flavor. Shanghai choy is great for stir-fry and blanching with oyster sauce. Shanghai choy is available year-round. Handling Tip Selection Shanghai choy has a uniform green color with no signs of yellowing or wilting. Shanghai choy stem is firm and moist. Storage Shanghai choy should be stored at 34°F - 36°F (1°C - 2°C) with a relative humidity of ninety-five to a hundred percent and with mist. The typical shelf life is two to three weeks. High humidity is important to avoid wilting. Shanghai choy is sensitive to ethylene, a naturally occurring gas that regulates ripening. Shanghai choy should not be stored with high ethylene-producing products to extend shelf life and avoid yellowing. Shanghai choy produces a low level of ethylene. Shanghai choy is not sensitive to chilling injury and should be stored as cold as possible without freezing.
