Seneca Blue

When Pete Messmer, the head cheesemaker at Lively Run, told us he was going to start making sheep's milk cheese, we practically jumped out of our chairs! Now, we have some of his first wheels of Seneca Blue in our hands, and we're ready to spread the sheep's milk goodness far and wide.  Creamy, sweet, and luxurious, this blue will keep you coming back for seconds, thirds, and fourths. The pristine sheep's milk (which Pete sources from a co-op of small sheep dairies in central New York) paints a savory, meaty backdrop for the delicately tropical blue veining within. The texture is silky and smooth, making it the perfectly decadent dessert cheese. If you bring this one out at the end of your next dinner party, it'll be tough to get guests to leave!
