Memo Notes The 2022 growing season was warm, which gave this wine more volume and richness than the leaner 2021, but Billaud's signature precision remains intact. Aroma: Classic "Kimmeridgian" mineral notes of crushed chalk and seashell, followed by yellow plum, white flowers, and a hint of beeswax. Palate: Vibrant and electric. Expect a core of lemon zest, green apple, and white peach. The texture is slightly creamy from the lees aging but is driven by a distinct saline (salty) streak. Finish: Long, dry, and exceptionally clean, with a lingering flinty finish. Memo Pairing Notes The Gold Standard: Fresh oysters on the half shell or chilled crab claws.  Main Courses: Grilled sea bass with lemon and herbs, or a creamy mushroom risotto. Cheese: Goat cheese (Chèvre) or a light, nutty Comté.
