SafAle US-05 (American Ale)

Clean American Fermentation • Lets Hops Shine • The Craft Brewing Workhorse SafAle US-05 is the definitive American ale yeast, prized for a remarkably clean, neutral fermentation that puts hops and malt front and center. Derived from the famous Chico strain, it has fermented more homebrewed pale ales and IPAs than any other dry yeast, delivering consistent, predictable results batch after batch. With 81% attenuation and medium flocculation, US-05 ferments thoroughly for a crisp, well-attenuated finish while staying in suspension long enough to clean up after itself, then settling into a firm sediment. Flavor & Aroma Profile Exceptionally clean and neutral fermentation character Very low ester production across its temperature range Crisp, dry finish that sharpens hop bitterness Transparent profile that lets hops shine unobstructed Subtle citrus note when fermented at the warm end Fermented cool, US-05 is nearly lager-like in its neutrality; pushed warmer, it stays remarkably restrained, picking up only a faint fruitiness. That forgiving nature makes it one of the most reliable strains a homebrewer can pitch. Brewing ApplicationsSafAle US-05 is a staple ingredient in many American craft beer styles, including: American Pale Ale American IPA Double IPA American Amber Ale American Stout Cream Ale American Wheat It is also a dependable choice for any recipe where the brewer wants the ingredients, not the yeast, to define the beer. Usage RecommendationsPitch one 11.5 g sachet into 5 gallons of standard-gravity wort, fermenting at 59–72°F. The cool end of the range produces the cleanest, crispest profile, while warmer fermentations finish faster with a touch more fruit character. For hop-forward beers, hold fermentation around 64–66°F and dry hop near the end of active fermentation to preserve delicate aromatics against a spotless backdrop.
