SafAle BE-256 (Belgian Abbey)

Abbey Ale Tradition • Fruity-Spicy Belgian Character • Built for Strong Ales SafAle BE-256 is a Belgian abbey strain prized for fast, vigorous fermentation and the refined fruity-spicy character of classic Trappist-inspired ales. It thrives in big, strong worts where other yeasts falter, making dubbels, tripels, and golden strong ales genuinely approachable for homebrewers. With 84% attenuation and high flocculation, BE-256 ferments powerful beers surprisingly dry — essential for keeping strong Belgians drinkable — and then clears well for a polished presentation. Flavor & Aroma Profile Elegant Belgian fruity esters — pear, apple, and stone fruit Gentle peppery spice in the abbey tradition Subtle honeyed malt impression Dry finish that hides alcohol gracefully Refined, balanced character even at high gravity Fermented at moderate temperatures, BE-256 stays poised and softly fruity; allowed to rise toward the warm end, its ester and spice profile blooms into expressive abbey character suited to the biggest styles. Brewing ApplicationsSafAle BE-256 is a staple ingredient in many Belgian abbey styles, including: Belgian Dubbel Belgian Tripel Belgian Golden Strong Ale Belgian Dark Strong Ale / Quad Belgian Blond Ale Belgian Pale Ale It is also a strong performer in any high-gravity specialty beer that needs reliable, characterful attenuation. Usage RecommendationsPitch one 11.5 g sachet into 5 gallons of standard-gravity wort — use two sachets above roughly 1.080 — fermenting at 59–68°F. Start cool to keep esters refined, then let the beer free-rise late in fermentation to ensure full attenuation in strong worts. Pair BE-256 with Belgian candi sugar in tripels and golden strongs: the simple sugar lightens the body while the yeast supplies all the personality.
