Rustichella Orecchiette Pasta

Orecchiette, meaning "little ears," is the classic shape of Puglia. The pasta is made by pressing pieces of dough with the thumb, and if you look closely, you can actually see a fingerprint in each one. Rustichella d'Abruzzo, found deep in the Vestine hills of Abruzzo, is a family farm focused on using the best ingredients for their famous pasta selections. The best durum wheat semolina is selected and mixed with mountain water with the same care and tradition of the past. The exclusive bronze mold gives the pasta its special coarseness, which aids better absorption of sauces and improves any type of recipe. The low drying temperature, which takes 40-60 hours depending on the shapes, preserves the nutritional value of the pasta, and the flavor of the wheat comes across wonderfully during cooking. Orecchiette are traditionally served alla Pugliese (with broccoli rabe, sausage, crushed chili flakes, and garlic) or with a hearty meat sauce that can be cupped in the dumplings. These little ears are also wonderful in pasta salads. Try also with roasted cauliflower, raisins, and Colatura di Alici, Please enjoy “al dente”. Please don’t overcook. Cooks 12-16 minutes. No dyes or preservatives.
