Rummo Orecchiette N° 87 are the "little ears" pasta of Puglia, made by Rummo in Benevento, Italy, a family company since 1846, with its slow-processing "Lenta Lavorazione" method. They are 1.45 mm thick and cook in 12 minutes. The classic pairing is spicy broccoli rabe; the cupped shape also suits lighter fish sauces. Sold in a 1 lb (454 g) package.
