Blue Corn Malt - Root Shoot Malting

Root Shoot Malting Malted Hopi Blue Corn Root Shoot Malting’s Non-GMO Malted Blue Corn delivers earthy sweetness, a creamy mouthfeel, and a subtle pink hue for brewers and distillers looking to stand out. Malted from the heritage Hopi Blue flint corn variety, this unique grain contributes a slightly sweet, corn-forward flavor reminiscent of unsalted blue corn tortilla chips while enhancing fermentability and body. Compared to traditional yellow dent corn, this flint variety offers a more rustic character and visual appeal, making it an exciting choice for creative recipes. Ideal for Mexican-style lagers, pre-Prohibition lagers, cream ales, or bourbon-style distillates, this malt can be used in place of flaked or raw corn while contributing additional flavor and mash performance benefits. Note: Blue corn is a flint variety—use a wider mill gap and a mill suitable for corn. More about Root Shoot Malting: The Olander family is deeply grounded and invested in Northern Colorado. More about Root Shoot Malting Malted Blue Corn: Root Shoot Malting’s malted blue corn is crafted from a non-GMO Hopi Blue flint corn variety using a careful germination and kilning process to preserve its distinct character. Expect slightly lower extract and friability compared to yellow dent corn, along with a firmer kernel that may require a wider mill gap for optimal crush. In the mash, it contributes a smooth, slightly sweet backbone with a unique earthy note and a faint pink hue in finished beer when used at higher percentages. Compared to flaked corn, malted blue corn offers improved mash integration, enzymatic contribution, and a more expressive flavor profile for brewers and distillers alike.
