Sliced Broadbent "Hillbilly" Heritage Prosciutto, one 3oz pack, Broadbent Ten years ago, under the direction of Ronny and Beth Drennan, in Kuttawa, Kentucky, Broadbent added a new line from our heritage breed, pasture-raised hams to their existing line, which goes back over 100 years. Their American style of prosciutto is lighter, with a uniquely sweet and salty flavor. Sliced Benton's Prosciutto, one 4 oz pack, Benton's Al Benton sliced a special batch of his long aged prosciutto just for us! We are so happy that this delicious southern delicacy is now accessible nationwide. This is a dry-cured southern ham aged between 20-27 months. It boasts a hint of smoke and deep, rich flavor. Serve just out of the package, as you would any Spanish or Italian ham! Sliced Finocchiona Salami, one 3oz pack, Tempesta Artisans  Finocchiona meaning “fennel salame” is identified closely with the region of Tuscany.  Tempesta complements this finocchiona with black pepper, Sangiovese wine, a sprinkling of whole fennel seed, and a blast of wild fennel pollen. The addition of whole fennel seeds show beautifully and add textural dynamics to each slice, while the wild fennel pollen perfumes the senses with the aroma of sweet anise.  Sliced Big Red Beef Salame, one 3 oz pack, Smoking Goose A world class beef salami made with Tajima Wagyu beef raised ethically and sustainably in Kentucky along with porcini mushrooms, garlic, and black peppercorns. We first met Curemaster Chris Ely of Smoking Goose at the Good Food Awards and fell in love with his wide selection of charcuterie. A respected member of the young talented generation of American curemasters he uses old world techniques while using sustainably produced ingredients. Caraway Rye Crackers, one 5 oz pack, Talbott & Arding, NY In a sea of cracker culture, this one stands out above all others. The rye flour in these delicious snappy (not mealy!) crackers comes from Farmer Ground in Trumansburg, NY where grain is grown organically and milled fresh. The sunflower oil is cold pressed in the Hudson Valley and Seneca salt finishes them. The recipe behind the cracker comes from a chef and a cheesemonger duo working together to celebrate quality ingredients. For appetizers, snacks and spur-of-the-moment gatherings, nothing concentrates the essence of meaty deliciousness more than cured meats!  Humanely raised on pasture  100% antibiotic-free Raised by independent family farmers Heritage pork and beef has more marbling resulting in more tender and juicy meat
