Proof and Wood 2/3 Pot Still Rum

Proof and Wood 2/3 Pot Still Rum is a remarkable spirit that originates from Jamaica and showcases a meticulous aging process. Distilled using 100% Pot Still Rum in Jamaica, it boasts an ester level ranging from 60 to 119 ppm, ensuring a rich and complex flavor profile. After spending a minimum of three years maturing in ex-bourbon barrels on the island, the rum is then transported to Kentucky, where it undergoes an additional two years of aging in ex-rye barrels. The aging process in both bourbon and rye barrels imparts distinct American whiskey influences to the rum, creating a unique fusion of flavors. Despite these influences, the unmistakable funkiness characteristic of Jamaican distillate remains prominent upon nosing the spirit. The absence of added sugars, colors, or flavors, coupled with the decision to forgo chill filtering, ensures a pure and unadulterated expression of the rum. Proof and Wood 2/3 Pot Still Rum is a carefully crafted blend of three barrels, resulting in a harmonious combination of flavors. Upon tasting, the robust rum reveals notes of raisins, along with hints of stone and tropical fruits, offering a truly indulgent experience. This exquisite spirit is designed to be savored on its own or paired with a medium to heavy cigar, enhancing the overall enjoyment of this sophisticated and flavorful rum. TASTING NOTES Hay and vanilla-softened esters precede a palate of English Breakfast tea and toasted cinnamon & clove with a hint of dehydrated strawberry on the finish.
