Professional Single-Bevel Artisan Knife Sharpening Service

Traditional Japanese single-bevel knives (Kataba) are precision instruments of culinary art. Unlike symmetrical Western blades, specialized tools like the Yanagiba, Deba, and Usuba feature a complex, asymmetrical geometry that requires a master-level understanding of Japanese blacksmithing principles. Our Single-Bevel Artisan Sharpening Service is dedicated exclusively to preserving this delicate architecture, ensuring clean cuts, effortless food release, and surgical accuracy. Simply select your blade length variant from the menu above to initiate your knife’s artisan restoration. The Expert Touch: 100% Freehand Single-Bevel Mastery Single-bevel cutlery can easily be permanently ruined by automated machines, pull-through devices, or rigid mechanical jigs. Every blade sent to us is sharpened completely freehand on premium water stones by elite artisans possessing over 20 years of specialized professional experience. Relying entirely on muscle memory and an intuitive, tactile response to the steel, our master sharpeners respect the intricate anatomy of your blade for two vital reasons: Preservation of the Kiriha & Shinogi Line: The flat, angled primary bevel (Kireha) must be meticulously polished up to the exact boundary line (Shinogi). Our experts hand-hone this plane perfectly flat, maintaining the absolute correct angle required to drive the blade seamlessly through delicate proteins or vegetables. Precision Uraoshi Alignment: The reverse side of a traditional single-bevel knife is uniquely concave (Urasuki), bordered by a razor-thin flat rim (Uraoshi). To remove the sharpening burr without flattening this essential hollow grind, the blade must be laid perfectly flat on a high-grit finishing stone with zero downward pressure. Decades of freehand mastery ensure this process is executed flawlessly, yielding a mirror-polished edge that defines the luxury performance of premium Japanese steel. Please select our Express Double-Bevel Sharpening Service, Standard Double-Bevel Sharpening Service, or Traditional Whetstone Sharpening Service for these items. Damage & Structural Repair: This service is strictly for edge maintenance and dull blades. If your single-bevel knife has significant edge chips, deep cracks, or a broken tip, please select our dedicated Chip Repair or Tip Repair restoration options. Pre-Service Evaluation: If our expert sharpeners determine that your single-bevel blade requires advanced structural restoration (such as deeply recessed Uraoshi wear, significant profile distortion from past improper sharpening, or severe chips) to safely achieve a proper edge, we will pause the service and contact you directly with an updated estimate before any work begins. No additional work will be performed or charged without your explicit consent. 📸 Quick Visual Verification Because single-bevel geometry is highly technical, we require a full-length photo of your knife as well as a picture of the tip and edge prior to shipping. Please upload a clear photo of the blade using the field below. This allows our intake team to visually confirm your blade matches your selected size variant and features an authentic single-bevel profile, guaranteeing a frictionless intake and swift placement into our master workshop queue.
