Green Label is built from unaged double-retort pot still rum from Hampden Estate in Jamaica, alongside unaged twin-column Coffey still rum, unaged double-retort pot still rum, and two-year-aged double-retort pot still rum, all from Foursquare. The blend gets its deep amber color from caramel made in-house at Foursquare through a centuries-old process of superheating sugar, a technique that adds rich color without adding any sweetness. True to the Probitas philosophy, no sugar or neutral column spirit was added, and the rum was distilled, matured, blended, and bottled entirely in the Caribbean. Bottled at a bold 57% ABV (114 proof), Probitas Green Label was designed to hold its own in bold, spirit-forward cocktails, standing in for whiskey in classics like an Old Fashioned or Sazerac, while staying light enough on its feet for a proper Daiquiri. It's quickly become a favorite among bartenders for its versatility, equally at home in a Mai Tai, Jungle Bird, Zombie, or a simple, well-made rum cocktail. Tasting Notes Probitas Green Label opens with rich molasses, brown sugar, ripe banana, dried fruit, vanilla, toasted oak, and warm baking spice, layered with fig, brown butter, pineapple, orange peel, and coconut. The palate is full-bodied and expressive, delivering caramel, toffee, tropical fruit, dark sugar, cocoa, and cinnamon, supported by structured tannins from the aged Barbadian pot still rum. The finish is long, warming, and complex, with a bright, citrus-forward close and lingering notes of spice, dark fruit, and rich molasses. Food Pairings Probitas Green Label's bold, spiced profile pairs well with Caribbean and tropical-inspired dishes. Try it alongside jerk chicken, grilled plantains, or blackened fish tacos, or lean into its dessert-friendly notes with banana foster, rum cake, or dark chocolate. Serving Suggestions Probitas Green Label is best enjoyed neat to appreciate its full complexity, or with a few drops of water to reveal additional layers of fruit and spice. It also performs exceptionally well in classic rum cocktails, including Mai Tais, Rum Old Fashioneds, Zombies, Jungle Birds, and other tiki-style creations where bold rum character is essential. Frequently Asked Questions What makes this different from Probitas White? Green Label is a higher-proof, darker expression of Probitas, made with a greater stock of aged rum and a higher-ester marque from Hampden Estate, then colored with in-house caramel for a bold, dark rum profile designed for spirit-forward cocktails. What is the alcohol content? 57% ABV (114 proof). Is any sugar or neutral spirit added? No. Probitas Green Label contains no added sugar or neutral/multi-column spirit; the color comes entirely from caramel made by heating sugar at Foursquare, which adds color without sweetness. What cocktails work best with this rum? Its bold proof and rich molasses character make it a great substitute for whiskey in an Old Fashioned or Sazerac, while it's equally at home in a Daiquiri, Mai Tai, Jungle Bird, or Zombie. How should I enjoy it? Neat, to appreciate its full complexity, or in classic rum cocktails like a Mai Tai, Rum Old Fashioned, or Zombie.
