Primo Junior Griddle

The Primo Junior Griddle is a solid cooking surface made for the Primo Oval Junior. Where the standard grate is bars with open space between them, this is one continuous plate, so eggs, chopped onions, shrimp and thin fillets stay on the grill instead of dropping into the coals. A flat top also changes what happens to the food. Fat and juices stay underneath it and cook off around the edges rather than falling away, and that puddle of rendered fat is where the crust on a smash burger and the browned corners of a pile of hash come from. Nothing about it is subtle: press meat onto a hot solid surface and you get colour across the whole underside instead of stripes. The Junior has the smallest cooking bed in the Oval line, which is a good argument for a griddle rather than against one. Every square inch of a solid plate is usable, so you lose nothing to the gaps, and small-batch cooking for one or two people is exactly what this size is built around.
