What’s Inside the Kit 1) Black Tucano Premium Blend Roasted Coffee - 250g This elevated Arabica blend connects two distinct Brazilian terroirs, thoughtfully combined to deliver balance and depth. Producers: Carlos Henrique & Daniele Alkimin; Marcos Rennó & Andréia Moreira Regions: Mantiqueira de Minas – Santa Rita do Sapucaí; Serra do Paredão – São Sebastião da Bela Vista, Brazil Altitude: 920–1,200 meters Varieties: Yellow Catuaí, Mundo Novo Process: Fermented and Natural SCA Score: Above 86 points Coffee Type: Arabica Blend (crafted from distinct single-origin lots) Body: Medium to Full | Acidity: Medium-Low Grind/Brew Intent: Ideal for filter methods and traditional coffee makers Tasting Notes: Chocolate, Red Fruits, Milk Chocolate, Caramel, Apple Pie, Cocoa, Raw Sugar (Rapadura), Nuts Expect a layered cup that unfolds from cocoa and caramel to fresh red-fruit highlights. The careful use of quality fermentation alongside natural processing enhances sweetness and texture while preserving clarity-an elegant, all-day brewing companion. 2) Black Tucano Organic Roasted Coffee - 250g Grown on sustainably managed Brazilian farms, this organically cultivated lot leans into comfort with a creamy body and dessert-like aromatics. Origin: Brazil (sustainably grown farms) Process: Natural SCA Score: Above 86 points Body: Creamy | Acidity: Balanced Aroma & Flavor: Milk Chocolate, Peanut Butter, Caramel Weight: 250g Rich, round, and deeply approachable, this organic coffee is tailor-made for those who crave velvety sweetness and a clean finish. The natural process intensifies chocolate tones and nutty warmth without sacrificing structure or balance. Origin and Craft Black Tucano partners closely with dedicated producers in the highlands of Minas Gerais. In the Premium Blend, farms across Mantiqueira de Minas and Serra do Paredão contribute microlots-each a precise expression of soil, altitude, and microclimate. Yellow Catuaí and Mundo Novo cherries are hand-selected, then guided through carefully calibrated fermented and natural processes to build complexity and a long, sweet finish. The Organic lot continues that ethos with sustainable cultivation and natural drying, preserving terroir-driven sweetness while reducing water usage. Roasted with restraint and intention, both coffees crack open with aromatic clarity and tactile polish. Each bag scores above 86 on the SCA scale, a testament to meticulous post-harvest technique and roast consistency-hallmarks of true specialty coffee craft. The Flavor Journey Premium Blend: A versatile profile that gracefully moves from cocoa and milk chocolate to red fruits and apple-pie spice. The medium-to-full body meets medium-low acidity for a cup that is both comforting and engaging. Expect lingering notes of caramel, raw sugar (rapadura), and roasted nuts, especially as the cup cools. Organic Coffee: Smooth and indulgent, this organically grown lot leads with milk chocolate and soft caramel, followed by a distinctive peanut-butter creaminess. Balanced acidity keeps it lively while the creamy body makes for a silky, satisfying mouthfeel-an exceptional daily driver for those who love a chocolate-first cup. Brewing Suggestions Pour-Over (V60/Kalita): Start at a 1:15–1:16 ratio, 200°F (93–94°C) water, and a 2:45–3:15 total time. Expect the Premium to highlight red-fruit sparkle and cocoa; the Organic will emphasize chocolate, caramel, and body. Chemex: Try 1:16 with a slightly coarser grind. Look for an elegant, clarified sweetness in both coffees, with the Premium offering layered complexity and the Organic showing plush texture. Batch Brewer: Use a medium grind and fresh, filtered water. The Premium pops with approachable complexity; the Organic becomes a crowd-pleasing, chocolate-forward cup. French Press: 1:15, 4 minutes, gentle plunge. The Premium gains syrupy density; the Organic turns extra creamy and comforting. Traditional Coffee Makers/Moka: Designed to shine in classic brewers; expect rounded sweetness and aromatic richness. While not built primarily for espresso, confident home baristas may explore tighter ratios for a nutty, syrupy shot. Pro tip: Use fresh grinding, a consistent burr grinder, and clean equipment to protect nuance. Small adjustments in grind and ratio can unlock red-fruit brightness in the Premium or amplify the chocolate-caramel core of the Organic. Thoughtful natural and fermented processing reduces water usage, while long-standing relationships with growers support resilient livelihoods.
