At Blakesville Creamery, cheesemaker Veronica Pedraza pays homage to this tradition with Piedras, a semi-firm washed sheep's milk wheel. It's rich and sweet from the sheep's milk, and yeasty and fruity from the wash. Pairs perfectly with late summer stone fruit and a crisp, refreshing white wine.
