Here's how it works: Green coffee beans are soaked in hot water, which dissolves caffeine and flavor compounds. The beans are removed, and the water passes through a carbon filter that captures only the caffeine. The resulting liquid, called Green Coffee Extract (GCE), still contains all the coffee's flavor compounds but no caffeine. New batches of green coffee are soaked in the GCE. Because the water is already saturated with flavor compounds, only the caffeine diffuses out of the beans. The process repeats until the desired caffeine level is reached.
