Super Strength Pecan Flavoring A typical 5-6 gallon batch uses 1-2 drams (0.125-0.25 oz), depending on the flavor and desired intensity. Add the flavor during kegging or bottling, starting with the lower amount and adjusting gradually to taste. Mix gently and sample before treating the entire batch. Use it in brown ale, porter, stout, old ale, dessert mead, or fortified-style wine. It is especially effective in malt-forward beverages with a smooth, full finish. Maple, bourbon, vanilla, coffee, chocolate, and apple are excellent partners. In a dry base, Pecan will read sharper; a little residual sweetness will make the aroma and finish feel fuller.
