~25 lbs White Peach aka "Bai-Tao", "白桃" White peach has a sphere shape and pinkish-white skin. The skin feels fuzzy to the touch. The flesh is white with a floral sweetness no matter firm or soft. White peach is more delicate than yellow peach and easily bruise. This is great for eating right on the spot without any cooking procedures. White peach is available year-round from various locations. Handling Tip Selection White peach is firm but gives slightly when pressured. White peach has a pleasant fruity fragrance. Avoid white peach that has a green color around the stem or has shriveled skin. The red blush does not indicate ripeness. Storage White peach should be stored at 31°F - 32°F (-1°C - 0°C) with a relative humidity of ninety to ninety-five percent and no mist. The typical shelf life is two to three weeks. White peach is sensitive to ethylene, a naturally occurring gas that regulates ripening. Do not store white peach with high ethylene-producing products to extend shelf life and delay softening. Unripe white peach produces a low level of ethylene. As the fruit ripens, ethylene production increases drastically. Most mid-season and late-season white peaches are sensitive to chilling injury. Chilling injury develops faster and more intensely in fruits stored at 36°F - 45°F (2°C - 7°C) than in those stored at the optimal storage temperature. Chilling injury symptoms include dry mealy flesh and flesh browning. Do not store white peach below 30°F (-1°C) which may result in freezing injury. Freezing injury symptom includes flesh breakdown during thawing.
