The flesh is soft with salmon-pink color and black seeds in the center cavity. Yellow papaya tastes sweet with a butter-like texture that melts in your mouth. Yellow papaya is available year-round. Handling Tip Selection Yellow papaya gives slightly when pressured. Yellow papaya has a pleasant melony fragrance. Skin is smooth with no signs of bruises or black spots. Storage Yellow papaya should be stored at 34°F - 37°F (1°C - 3°C) with a relative humidity of ninety to ninety-five percent and no mist. The typical shelf life is less than seven days. Yellow papaya is not sensitive to ethylene, a naturally occurring gas that regulates ripening. Yellow papaya produces a high level of ethylene. Yellow papaya is sensitive to chilling injury. Symptoms appeared after twenty-one days at storage temperature under 41ºF (5ºC). Symptoms include skin scald, hard lumps, and water-soak flesh. As the fruit ripens, it becomes less sensitive to chilling injury.
