Pale Chocolate

Gentle Cocoa Notes • Smooth Light Roast • Nutty Brown-Ale Depth Pale Chocolate is a lightly kilned chocolate malt prized for delivering cocoa and coffee character with a notably softer touch than standard chocolate malt. Its gentler roast keeps harshness out of the glass, making it the malt of choice for delicate English dark styles where smoothness matters. With a color rating of 200 °Lovibond and 30 PPG of extract, Pale Chocolate adds rich brown color and mild roast depth without pushing a beer into heavy, burnt territory. Flavor & Aroma Profile Soft cocoa and milk-chocolate notes Light, smooth coffee roast Nutty, toasted grain character Toffee-edged malt depth No harsh or acrid edges Small additions of Pale Chocolate lend a subtle nutty-cocoa undertone, while larger additions build a clear but always gentle chocolate-roast profile — it stays smooth even at rates where darker malts would turn aggressive. Brewing ApplicationsPale Chocolate is a staple ingredient in many smooth English-style dark beers, including: Brown Porter Dark Mild English Brown Ale Oatmeal Stout Sweet Stout Old Ale Northern English Brown It is also an excellent substitute for standard chocolate malt anywhere a softer roast is preferred. Usage RecommendationsPale Chocolate is typically used at 3–10% of the total grain bill. Lower percentages contribute nutty color and a whisper of cocoa, while higher percentages develop the smooth, rounded chocolate character that defines classic brown porters and milds. Pair it with medium crystal malts for a balanced English brown ale, or use it alongside flaked oats in an oatmeal stout for a silky, mocha-like profile.
