Organic Heartstrings

Organic Heartstrings from Wonderstate Coffee is a masterclass in Ethiopian blending, combining 80% washed beans from Worka Chelbessa with 20% natural process beans from Ayla Bombe. The result earned 93 points from Coffee Review, which called it "a beautifully crafted blend that highlights the best of washed and natural Ethiopian profiles — floral, citrusy, quietly luxurious." These aren't just roaster notes; they're the unmistakable markers of Ethiopia's coffee terroir, where altitude, varietal, and processing converge into something you can taste in every cup. Tasting Notes Expect plum and dried fruit sweetness up front, anchored by creamy milk chocolate and a whisper of florals. The washed Worka Chelbessa brings clarity and brightness — think honeyed citrus and bergamot — while the natural Ayla Bombe adds body, jammy fruit complexity, and a lingering, wine-like finish. The acidity is gentle and balanced, never sharp, with a medium body that feels substantial without being heavy. This is a coffee that rewards attention but doesn't demand expertise to enjoy. Brew Methods Heartstrings shines across the board. As pour over (V60, Chemex), the washed component's floral notes lift beautifully, while the natural process adds texture and depth. Brewed in a French press, the body rounds out and the chocolate notes deepen. It also pulls excellent espresso — dial it in slightly coarser than you'd expect for a blend this complex, and you'll get sweet, fruit-forward shots with crema that holds. For drip, use a standard medium grind and expect a clean, balanced cup that appeals to guests who think they don't like "fancy" coffee.
