Organic Flyway

Organic Flyway is Wonderstate Coffee's answer to the classic espresso blend reimagined—a collaboration between Guatemala's high-altitude sweetness and Ethiopia's radiant acidity. Sourced from 67% Guatemala Todos Santos and 33% Ethiopia Worka Chelbessa, this organic coffee delivers layers of dried cherry, bright citrus, and smooth caramel that work beautifully across the café spectrum. Todos Santos brings structure and body, with its volcanic soil lending chocolatey depth and a silky mouthfeel. Worka Chelbessa contributes elegance—floral aromatics and a lively, tea-like finish that keeps each sip interesting. Together, they create a coffee that's approachable enough for everyday drinking but complex enough to showcase your technique. Tasting NotesExpect an opening of jammy dried cherry that transitions into tangy citrus brightness—think candied orange peel—before settling into a caramel sweetness on the finish. The body is medium to full, coating the palate without heaviness. Acidity is balanced and crisp, adding lift without sharpness. The finish lingers with subtle cocoa and stone fruit undertones. Brew MethodsWhile the name nods to espresso, Organic Flyway is genuinely versatile. As espresso, it pulls thick and sweet with pronounced fruit notes, ideal for milk drinks or straight shots. In a pour-over, the citrus and floral elements shine, revealing the Ethiopian component's delicate complexity. French press amplifies the body and caramel notes, making for a rich morning brew. It also excels in drip or automatic machines for those seeking a reliable daily drinker.
