Process & Profile Old Elk Bourbon distinguishes itself through its innovative approach to bourbon-making. Spearheaded by Master Distiller Greg Metze, who brings over 40 years of expertise, the brand employs a proprietary "Slow Cut" proofing process. This gradual blending of water with whiskey over weeks, rather than days, minimizes heat generation and preserves delicate flavors, resulting in exceptional smoothness. The mashbill reflects Old Elk's commitment to creativity, featuring a unique high-malted barley content (up to 34%) alongside corn and rye, providing a fusion of sweet, nutty, and spicy notes. For blends such as the Four Grain Bourbon, wheat is also introduced, rounding out the flavor profile. The whiskey is often aged for around five years, with select releases featuring older age statements, ensuring a complex and mature character.
