Northern Brewer

California Common Heritage • Woody, Minty Backbone • Rugged Dual-Purpose Workhorse Northern Brewer is a classic German-grown hop with a uniquely rustic personality — woody, minty, and evergreen — best known as the signature hop of California Common, the steam-beer style it has defined for over a century. It is prized for clean, sturdy bitterness and an aroma unlike anything in the citrus-driven modern catalog. With an alpha acid content of 8%, Northern Brewer sits comfortably in dual-purpose territory: strong enough to bitter efficiently, distinctive enough to carry the aroma of an entire beer on its own. Flavor & Aroma Profile Fresh pine and evergreen notes Cool, distinct mint character Woody, rustic backbone Dry herbal undertones Clean, assertive bitterness As a bittering hop it stays neutral and firm; moved into the late boil, its woody-minty aroma emerges and gives amber lagers and dark ales an unmistakable old-school edge. Brewing ApplicationsNorthern Brewer is a staple ingredient in many traditional styles, including: California Common / Steam Beer English Porter Dry Stout Extra Special Bitter (ESB) Munich Dunkel Altbier It also makes a dependable clean bittering charge in German lagers where a noble finish will follow. Usage RecommendationsFor a 5 gallon batch, use 0.75–1.5 oz at 60 minutes for firm bitterness, with an optional 0.5–1 oz at 15 minutes for the classic woody-mint aroma. Bittering-only use keeps things clean and traditional; late additions are essential if you want true steam-beer character. For an authentic California Common, use Northern Brewer at every addition and ferment a lager yeast warm — the style was built around exactly this combination.
