Natural (Dry) Process

This is coffee for adventurers. Alma Coffee's Natural (Dry) Process is a sun-dried, fruit-forward expression of Honduran terroir from Finca La Unica, a high-altitude farm owned by fifth-generation coffee farmer Leticia. Here, whole coffee cherries dry intact under the Central American sun, absorbing the fruit's sugars and developing flavors that read more like a fruit bowl than a traditional cup. Expect juicy brightness, tea-like body, and notes that shift with each sip—stone fruit, berry, sometimes even tropical funk. This is what happens when a family farm perfects a process over years of trial, consultation with agronomists, and obsessive attention to detail. Tasting Notes Juicy and vibrant, with pronounced fruit-forward sweetness. You'll find strawberry, peach, and sometimes a hint of blueberry or tropical fruit, depending on the harvest year. The body is lighter and more tea-like than washed coffees, with a silky mouthfeel and a clean, lingering finish. Acidity is bright but balanced—think fresh fruit, not citrus punch. This coffee evolves as it cools, revealing new layers with each temperature drop. If you're used to chocolate and caramel notes, this will feel like a different beverage entirely. That's the point. Brew Methods Natural process coffees shine brightest in methods that preserve clarity and highlight fruit notes. Pour over (V60, Kalita Wave) is ideal—use a medium-fine grind and slightly cooler water (around 200°F) to tease out sweetness without over-extracting. Chemex works beautifully if you want a cleaner, more delicate cup. For espresso, expect a wild, fruit-bomb shot that's polarizing in the best way—pull it short and fast to maximize sweetness. French press can work, but the heavier body may obscure some of the tea-like elegance. Cold brew brings out tropical fruit and berry notes in a smooth, low-acid concentrate perfect for summer.
