MTC Gindara Black Cod Miso Marinated

Saikyo-zuke (saikyo-yaki) is a cooking method in which fish fillets are carefully marinated in a generous amount of Saikyo miso. When grilled, you can taste the slightly sweet flavor and aroma of the miso. The umami components of the miso permeate the fish, creating a complex flavor that is different from the simple flavor of grilled fish with salt alone, with the mixture of Saikyo-miso and the fat of the fish.
