Benefiting from the caillottes terroir—pure limestone soils accented by small white stones—this vineyard excels at reflecting sunlight to promote optimal grape ripening. The grapes are hand-harvested at peak maturity, ensuring only the finest fruit makes it to the cellar. Post-harvest, the juice undergoes gentle extraction and fermentation at low temperatures, followed by aging on fine lees for 10-12 months. Weekly batonnage (lees stirring) enhances the wine's complexity and texture, resulting in a Sancerre with exceptional elegance and balance. Tasting Notes Les Bouffants offers an extraordinary sensory journey. It opens with a fine, fresh nose featuring smoky and mineral notes, characteristic of the Sancerre terroir. On the palate, its generosity shines through with vibrant citrus flavors, including lime and passionfruit, mingled with hints of melon and fig. The wine's hallmark minerality and racy acidity create a crisp, dry finish, leaving a lingering impression of finesse and richness.
