Raw Monterey Jack

Experience the smooth, creamy, and slightly nutty flavor of our Raw Monterey Cheese, aged for 60 days to achieve its signature mild, melt-in-your-mouth texture. This classic cheese is known for its versatility, adding a subtle richness to any dish without overwhelming the palate. True to tradition, our Raw Monterey is crafted by curdling raw A2 milk with traditional animal rennet before being carefully drained, salted, and aged to perfection. The result is a cheese that’s smooth and slightly tangy, with just enough complexity to make it stand out without being overpowering. The raw milk used in our Monterey comes from 100% grass-fed, regeneratively raised Jersey cows, rotated on lush, nutrient-dense pastures. This diverse, natural diet produces milk that’s richer in flavor and nutrition. Our cows are A2A2, meaning their milk is gentler on the digestive system, allowing even those sensitive to dairy to enjoy this cheese with ease. More than just flavor, our Raw Monterey is packed with essential nutrients like bioavailable calcium, vitamin K2, lactoferrin, and probiotics, supporting overall health and wellness. Raw cheese has been a staple in human diets for thousands of years, offering nutrient-dense goodness in every bite. Say goodbye to pasteurized, flavorless Monterey cheeses. With our time-honored methods and the finest A2 raw milk, our Raw Monterey Cheese delivers an authentic, rich experience that’s as wholesome as it is delicious.
