MISE 02: The Restaurant Issue

A restaurant is a business. That is the least interesting thing about it. A restaurant is a city's social infrastructure, a neighborhood's memory, an immigrant's first address in a new country, and the gathering place a community uses to hold itself together. The industry that runs these places is protected from nothing. So MISE 02 takes the restaurant and looks at it from fourteen years out, when the pressures shaping it today have either intensified, evolved, or broken. Four Futures. Eight Stories. I, Restaurant: Deportation campaigns emptied the kitchens, machines filled the gap, and the human hand got more valuable, not less. A sushi master's counter floats on the revenue of the robot behind it, and an AI-designed fried chicken sandwich becomes more popular than the food system behind it can bear. Get Big or Get Out: Health insurance, not cooking, decides who owns a restaurant. An operator trades his family's restaurant for a corporate job whose plan covers his daughter's gene therapy, and a culinary director fights to keep her chain's wood-fire kitchens alive through an acquisition. Family Meal: A boom that lands wherever capital is already dense, and a deportation machine that runs on anonymous tips. A cook chooses between an AI-lab salary and the wok of his family's Cantonese restaurant in Flushing, and a Dearborn restaurant becomes the cause that holds a neighborhood together after ICE takes its owner. All You Can Eat Everything: Abundance solved almost everything and found a new problem underneath. A restaurant critic eats her way through a members' club where joining costs a quarter of a million dollars, while the farmers market on her drive home serves carrots. Between the scenarios: analytical essays on the forces driving each world, Small Bites dispatches from around the globe, speculative advertisements from 2040, and a children's book for the future of food. What is Mise? Mise builds futures for food the way Detroit automakers build concept cars. A concept car isn't a prediction. It's a company thinking out loud about the future. These stories aren't predictions of what will happen to restaurants. They're prototypes of what could. Each scenario pairs original fiction with analysis, so you see the world from more than one seat, then leave with questions worth bringing back to your own work. What's Inside? The Format: 200+ pages of original fiction, scenario analysis, and full-page photographic illustration, designed like a magazine brought back from 2040. The Topics: Automation and AI in kitchens, healthcare and restaurant ownership, immigration and restaurant labor, luxury and distinction in dining, and what a neighborhood loses when a restaurant closes. The Takeaways: Each scenario closes with an honest analysis of the real-world forces it extrapolates from, and questions for the people building the industry's next fifteen years. Who's it For? Operators and Industry Leaders: If you run restaurants, feed people, or supply the people who do, these are the futures your next decade of decisions will be made in. Food and Foresight Thinkers: Four rigorously built scenarios using the STEEP framework, told through fiction that treats the future as a place where ordinary people live. Everyday Eaters: Everyone has a restaurant they'd grieve. This issue is about what keeps those places alive. New to Mise? Download The Perfect Sandwich, a complete story from this issue, free.
