Miso Natural Cultivation"Mirai" -自然栽培 未来 味噌-

Pure Ingredients, Naturally Grown, Crafted for the Future Discover Mirai, a rare and thoughtfully crafted miso made with naturally grown rice and soybeans, along with carefully selected natural salt. The ingredients are produced using natural farming methods, meaning no pesticides or chemical fertilizers are used. The goal is to grow each crop as closely to its natural state as possible, allowing the true character of the ingredients to shine through. Great care was also taken in selecting the salt. The makers traveled to a remote island in South Korea to explore traditional salt fields and ultimately chose two exceptional salts known for their purity, distinctive flavor, and beautiful grain. Their unique character complements the miso and enhances its naturally rich taste. Mirai is also aged in a remarkable new cedar barrel handcrafted to last for the next 100 years. Made by a master Japanese barrel craftsman, this special vessel represents a rare tradition that is gradually disappearing as fewer miso and soy sauce makers continue to use large wooden barrels. From naturally grown ingredients to master craftsmanship, every part of Mirai reflects a commitment to preserving traditional fermentation while creating something for the future.
