The Story of Midnight Vigils Dark Roast Blend If your idea of the perfect coffee is a full-bodied brew with chocolate flavor notes and a warm, smoky aroma, you’re not alone. We’re also fond of the richness and depth of dark roast beans, so we poured so much care and love into making this delicious blend.  But it’s not just an appreciation for that warming dark chocolate flavor that inspired this specialty coffee. When we made Midnight Vigils, we had a specific goal in mind: We wanted to create a rich, full-bodied, delicious cup to wake up to in the morning after reciting the midnight vigils. Being awake at midnight to chant the psalms for the Night Office is an ancient monastic practice intended to break up the hours of darkness and sanctify the night. It’s a rich and beautiful ritual that deserves a morning just as sublime to complement the eve before. After experimenting with the roasting process for hours and discovering the best combination of coffee beans for those lovely nutty, chocolate, and caramel tones, we knew we had created the perfect cup. Midnight Vigils was first roasted in 2008 with coffee beans from Central and South America, and since then, it has become one of our most well-loved dark roast coffees.  Try a cup yourself or gift a friend with this unforgettable coffee.  Flavor Profile and Characteristics Midnight Vigils is not for the light-hearted; if you’re a light roast or medium roast lover, it may be time to dive into the dark side with this dark bean coffee blend. While lighter roasts (like medium and light roasts) have lighter bodies and more nuanced flavors, dark roasts will have heavier bodies and stronger, more robust flavors. Midnight Vigils is a robust yet smooth coffee with elements of dark chocolate, vanilla bean, and molasses. It has a lovely smoke and hot chocolate aroma with a hint of sweetness reminiscent of roasting marshmallows, graham crackers, and milk chocolate around a campfire for s’mores.  This rich coffee is sure to impress anyone who enjoys darker coffee. It offers a taste with all the depth and complexity of a full-bodied dark roast but also features a subtle sweetness that delights the palate. How to Enjoy Mystic Monk Midnight Vigils This coffee pairs well with cream or milk as a robust dark roast. Top with a dollop of whipping cream or coconut cream for a dessert-like treat. You can also add a touch of sugar or honey to bring out all those caramel, vanilla, and chocolate notes.  With just the right amount of dark chocolate bitterness, Midnight Vigils is a wonderful coffee to enjoy with sweet treats, especially citrusy or nutty baked goods like almond croissants and orange scones. You can also drink it as an iced coffee in the summer when you want to sip a refreshing chocolatey coffee.  Dark Roast Ground Coffee At Mystic Monk, we use a special roll grinder for all our ground coffees. It’s how we achieve a nice, even grind that works well with any brewing equipment, including a gold filter, French press, percolator, or moka pot. We also have a unique process for roasting our beans that ensures a smooth finish.    Image Source More good news: Because of the way we package our coffee, it stays fresher longer. Enjoy your Midnight Vigils ground coffee within two weeks of opening for optimal freshness. Dark Roast Whole Coffee Bean With a darker roast, the beans have a slightly oily texture. That’s because the beans release natural oils during roasting. These beans are dark mahogany brown and have a sweet, nutty aroma with hints of vanilla, much like a chocolate bar.  Because the beans are so dark and rich, you can grind Midnight Vigils and use them to make a delicious espresso or Turkish coffee.  Is the Midnight Vigils Blend Right for You? A full-bodied blend, this coffee isn’t for the faint of heart. But if you enjoy a coffee that tastes like milk chocolate when you add sugar and cream, Midnight Vigils might become one of your favorite coffees. It’s ideal for anyone who prefers dark roasts and the bitterness of dark chocolate.  Because the chocolate flavor is so pronounced, this is also an excellent base for blended coffee drinks. Blend with your favorite type of milk, ice cubes, bananas, sugar, and vanilla for a tasty morning coffee drink.
