Air Chilled Boneless Skinless Chicken Thighs

La Belle Farm, in Ferndale, NY, has a cult following in the foodservice industry because their chicken is incredibly high quality and is the preferred farm bird for discerning chefs. All La Belles chicken is ABF, with no growth hormones or GMOs. Their birds are fed a local diet of corn and soy and given plenty of space to roam. They are also slow-growing birds-the longer the grow-out period, the more delicious the flavor. And last but not least, their chicken is air-chilled instead of being cooled in a water bath, so the skin gets super crispy. Boneless, skinless thighs offer deep flavor and succulent texture. Naturally fattier than breast meat, they are incredibly forgiving and a great pick for rich braises, pulling, and pan-frying.
