Melon Flavoring

Super Strength Melon FlavoringA typical 5-6 gallon batch uses 1-2 drams (0.125-0.25 oz), depending on the flavor and desired intensity. Add the flavor during kegging or bottling, starting with the lower amount and adjusting gradually to taste. Mix gently and sample before treating the entire batch. Flavor Profile and Beverage IdeasMelon offers soft honeydew and cantaloupe notes with a fresh, lightly floral sweetness. It suits wheat beer, blonde ale, dry cider, melomel, white wine, hard seltzer, and Ranch Water. Keep bitterness low and acidity moderate to preserve the delicate fruit. Cucumber, lime, mint, strawberry, pear, and ginger can add definition. In a dry base, Melon will read sharper; a little residual sweetness will make the aroma and finish feel fuller.
