Malabar Black Peppercorns

Malabar Black Peppercorns If the Tellicherry is the complex, floral, citrus-forward peppercorn that rewards careful attention, the Malabar is its bolder, more straightforward sibling — deeply earthy, robustly peppery, and intensely aromatic in a way that makes it the ideal everyday workhorse pepper for serious home cooks. Both come from the same Malabar Coast of Kerala, India — the birthplace of the world's finest black pepper — and both are direct sourced at the highest grade available, but they bring distinctly different personalities to your kitchen. Malabar peppercorns are darker and more intense in flavor than Tellicherry, with a bolder, slightly more bitter character and a heat that is actually milder than our Tellicherry — making it a surprisingly approachable choice for people who love deep pepper flavor without as much bite. Where Tellicherry unfolds in layers of citrus and floral complexity, Malabar leads with a confident, earthy depth that stands up beautifully to bold, robust cooking. Perfect for: Slow braised meats — pot roast, short ribs, lamb shanks Hearty soups, stews, and stocks Bold marinades for beef and pork Cracked over a thick cut steak before searing Classic pepper sauces and gravies Robust cheese boards with aged and sharp cheeses Pickling brines and fermented vegetables Tellicherry vs Malabar — which one is right for you? Choose Tellicherry when you want complex, layered pepper flavor with citrus and floral notes — ideal for finishing dishes, delicate pastas, fresh mozzarella, and elegant cooking where nuance matters. Choose Malabar when you want bold, earthy, deeply peppery intensity that stands up to robust braised meats, hearty stews, and powerful flavor profiles where pepper needs to hold its own. Can't decide? Blend both in your pepper mill for a complex, layered grind that brings the best of both worlds to everything you cook. Always grind fresh for maximum aroma and flavor. Whole peppercorns retain their full character until the moment they're cracked — pre-ground pepper loses its complexity within days.
