SILVER - 2025 126th International Cheese and Dairy Awards, UK Madcap is a new limited-release cheese, created by our cheesemakers, Reddy and Jake, in response to a challenge we gave them: to develop a competition-worthy entry for the International Cheese and Dairy Awards in the UK. Remarkably, just weeks after the concept was born, it took home a Silver award. The unique cone-shaped cheese is thoughtfully designed to ripen at a particular pattern and pace. A tailored blend of cultures forms a delicate, wrinkly rind, and the notes of tropical fruit, fresh-cut grass, alongside lemon-like acidity and lingering finish. Aged for 14 days, the final texture yields an exceptionally creamy paste and light blond rind.
