Lemon Honey Candy

The Keeping of Bees Is Like the Direction of Sunbeams Thoreau said it about beekeeping, and lemon is the flavor that proves him right. This is the candy for the gray afternoon: the sky flat, the light low, the day asking for something bright. A drop opens with honey, and then the lemon arrives, sharp and clean, like sun hitting the counter at exactly the right angle. The brightness is real. All natural lemon oil carries the flavor, and citric and malic acid, the same acids found in the fruit itself, give the finish its zing. Bees know citrus well; lemon blossoms are among the most fragrant flowers they work all year, and the trees bloom in waves, so a single branch can hold flower and fruit at once, the way this candy holds sweet and tart together. Each hexagon-window box holds 3.5 ounces of drops made without corn syrup and without gluten. The box is sustainably made paper you can recycle or compost, and the inner bag is recyclable food-grade plastic. What Makes Our Lemon Honey Candy Special? All natural lemon oil: Real citrus oil carries the flavor, not artificial lemon. Citric and malic acid, both found naturally in fruit, sharpen the finish. Honey at the center: Made with real honey and Non-GMO sugar. No corn syrup anywhere in the recipe. Sweet first, then the zing: The flavor arrives in order. Honey opens soft, and the lemon lands bright and quick behind it. Gluten-free and corn-syrup-free: Made without gluten or corn syrup. Produced in a facility that handles peanuts and tree nuts. Thoughtful packaging: A sustainably made paper box with a honeycomb window, recyclable or home-compostable when clean and dry. Put a little sunlight in the pantry. How to use: Enjoy them right out of the box. Drop one into a cup of hot Bees Knees Tea and let it dissolve; honey and lemon settling into a classic nutty honey bush tea, the whole moment in one mug. Tuck a box into your carry-on for long flights and dry cabin air. Crush a few drops and rim a Bee's Knees cocktail for a honey-lemon sparkle where the sugar usually goes. Store in a cool, dry place away from sun and humidity.
